Fresh: Wintery Superfood Super Salad
Are you into this Superfood craze? I totally like the idea of it: awesomely nutritious foods wearing little super-hero capes, crusading for our excellent health and vital wellbeing. I like that. Truth be told, ‘Superfood’ is a bit of a fudgey description. It’s a broad label used to describe things that are good for us. It’s not really a scientific term at all.
But don’t be glum about the Superfoods, because what it really means is that rather being an exclusive few, LOTS of foods have the super healthy qualities. You can eat Super every day as long as you are eating a varied diet of fresh fruits, nuts, protein and vegetables! You’re probably already doing Super, in fact!
Today I thought I’d share a Wintery ‘Superfood’ Super Salad with you. It’s chock full of fresh, healthy goodness. It’s a Super Salad, without having to brag about it too much. I like the crunch of salad, but I also like a bit of roasted Wintery goodness too. So I’ve combined the best of both. Some crunchy baby spinach, broccoli and radishes, some ginger and honey roasted carrots and pumpkin, some healthful almonds, an avocado for a bit of rich, green flavour and an Asian inspired dressing to bring it all together.
Winter Superfood Super Salad
serves six as a side dish or four as a meal
Make The Roasted Carrots & Pumpkin
10 baby carrots (no need to peel!)
500g pumpkin, peeled and cut into 1″ chunks
1 tsp of diced, fresh ginger
1 tsp of honey
1 tablespoon of white miso (you can use the miso soup sachets!)
1/4 cup of olive oil
In a big bowl, mix the ginger, miso and the honey with 1/4 cup of boiling water. Throw in the pumpkin and the carrots and toss well so that everything’s nicely coated.
Pour the olive oil into a baking dish and then add the pumpkin and carrots. Toss well once more and bake for 30 minutes in a 180 C (360 F) oven (or until tender and caramelising)
Lift out of the oil and set aside.
Make The Dressing:
3 tbsp of vegetable oil
1tbsp of soy sauce
1 tbsp of red wine vinegar
1/2 tbsp of sesame oil
juice of one lime
Whisk all ingredients together well (or put them in a jar and shake them up!)
Assemble The Salad:
In a big bowl place…
2 cups of baby spinach, washed and dried well
1 cup of broccoli, cooked til tender and then cooled
6 radishes, sliced thinly
1 avocado, sliced
50 almonds, chopped
the roasted carrots and pumpkin
a handful of fresh herbs
Dress the salad gently with the dressing and season well with salt and pepper.
Variations : add some sliced seared beef or some bbq chicken or some tofu
Boost the SUPER! : add some other super fresh and healthy things : sliced mushrooms, blueberries, sprouts, shaved cabbage, pumpkin seeds, sesame seeds, sliced pear, go wild!
