Pesto, right? It’s good, yes? Personally I love a bit of pesto. I’m into the traditional basil pesto. Yum. But I also love all kinds of pesto variations. Parsley pesto. Coriander pesto. Spinach pesto. Win.
You might already know that pesto has its origins in Genoa in the North of Italy, but like all good things its travelled much further afield and been adapted in all kinds of clever and more-ish ways.
We’ve just sprung into Spring in Australia, and bountiful basil is not too far away, but I’m loving the idea of broccoli pesto and other pesto spins, which make the most of seasonal produce and blitz up the flavours of the day into something green, silky and delicious.
I’ve pulled together lots of recipes featuring pesto as the hero. Follow the recipe and reap the rewards, or tweak it into something you know you’ll like better. Let’s go pesto!
