Food : Eleven Uber-Healthy Noodle Recipes
Noodle salads are the perfect carb meets virtue combination. Perhaps you can’t quite justify a bowl of pasta at lunch time? Perhaps it seems too heavy and awesome? Maybe a noodle salad full of crunch and colour is the perfect alternative? Yes?!
I make a couple of noodle salads myself. I make one with soba noodles and spinach and sesame dressing, dotted with cherry tomatoes and avocado slices. And I make another one with noodles and tofu and spicy Korean kimchi. YUM. There is something in the slippery, nicely dressed wholesomeness of dishes like these that make them the perfect meal for me.
