Gosh. It’s super hot today in Melbourne. It’s going to be 37 and things are already a bit swampy. We’ve been tetchily bickering over what to have for dinner. I think I want to make this Chicken & Bread Salad. Or maybe Potato Salad with some cold cuts. Or even a cold soba salad.

Boyfriend is talking Pad Thai, spicy Thai soup, laksa or grilled something with something. I don’t even know what that last thing is, but I fear we are going to be at swampy loggerheads for most of the morning. Maybe we can each make our own dinners?

Here are some good ideas of swampy day dinners. It’s all about salad really, because a cool, clean, green bowl of crunch is always an excellent choice.

Is it hot where you are? Are you arguing over dinner? Do you want to make Chicken & Bread Salad too?

Spicy soup is dumb on a hot day, right?

They all look so delicious! There’s nothing better than whipping up salads on a hot summers day – preferably one that doesn’t involve turning the oven on!

These look great! I can’t choose a favourite though, might have to make them all!
