Tofu. Not just for hippies. You can quote me on that.

Tofu is delicious. The trembly, whiteness of it bobbing in a bowl of miso soup. The golden deliciousness of  it dressed up as Agadashi Tofu.  Tiny cubes of it tossed through some soba noodles with sesame dressing. The spongey goodness of it stowed in the bottom of a bowl of laksa. The dark spiciness of it in black pepper tofu.

Am I making you hungry baby?

I love tofu. It’s satisfying, comforting, yielding and has the amazing ability to soak up all that is good around it. Doesn’t that sound great to you?

I generally buy the golden, deep-fried tofu at my Asian grocer. Its chewy crust contrasts perfectly with its soft interior. I throw it in all kinds of things, cut into teensy bits to create as many mouthfuls as possible. And then I add a bunch of different flavours: red curry or sesame or miso or soy. And then some crunch (like snow peas or beans or bean sprouts.) Or just some rice, if I’m feeling a bit sooky.
