Perhaps you are a vegetarian? Or perhaps you are a vegetable fan? (Perhaps you are both?!)  I am not a vegetarian (although I did challenge myself to 30 days as a vegetarian last year), but I do love vegetables and quite happily go meat free a lot of the time.

It seems I am not the only one.  There’s a whole movement (supported by Sir Paul McCartney and a ton of other great people) dedicated to going meat free at least one day a week, perfect for people who want to eat a bit more mindfully, but don’t want to make the jump to full-fledged vegetarianism.   Meat Free Monday encourages us to swear off meat on a Monday, and cook something healthy, ethical and delicious instead.  There’s a Meat Free Monday cookbook, and lots of recipes on their site, too. Nice.

In the spirit of Meat Free Mondays, I’ve compiled a whole lot of vegetarian meal ideas for us to try.  Perhaps Monday is not the best day for you to go meat free? I think that’s a-okay, and it’s the sentiment that’s important, so go crackers for your Meat Free Thursday, if that works for you!

Are you a vegetarian? Do you eat meat? And what kind of vegetarian dishes do you love? (Share recipe links, if you fancy that!)

Yes I am vegetarian who eats a tiny bit of chicken and fish once or twice a year. I was raised vegetarian so it’s second nature to me. One of our most favourite vegetarian meals is one we call Haystacks. It is fresh, delicious and perfect to serve when having visitors because everyone can build their haystack with the food they love. I have shared how to make haystacks here on my blog – http://thejanellewindcollection.typepad.com/the_janelle_wind_collecti/2012/01/have-you-ever-eaten-haystacks.html
We have recently tried a yummy Curried vegetable and lentil lasagne too, here is the recipe, it’s delicious and my kids love it too! http://www.sanitarium.com.au/recipes/curried-vegetable-and-lentil-lasagne

We love haystacks too Janelle. With due respect, you cannot be a vegetarian and eat meat anad chicken.. I think there is another term for that diet.Someone may know what it is. What is difficult is being a true vegetarian when you have to eat gluten free. Most of these recipes woud need to be modified.
