Food: Eleven Ace Salads To Try

Salads. Yum. Not only are they packed full of crunch, they are packed full of health and virtue, too! As much as I love a green salad, I’m totally into mixing things up and trying new things.
Recently I made this Salade Nicoise. It has the best vinaigrette with all the right notes of flavour. Not too vinegary, not too oily. Just right. It’s Julia Child’s recipe and is perfect on a simple salad or thrown over some boiled potatoes with some fresh herbs. YUM! Here’s how:
Julia Child’s Vinaigrette
one third of a cup red or white wine vinegar
Salt and pepper, to taste
1 tablespoon Dijon mustard
two thirds of a cup olive oil
1. In a bowl, whisk the vinegar, salt, pepper, and mustard.
2. Whisk in the oil in a slow, steady stream; set aside.
