Do you like lamingtons? I like them so much I put a Pink Lamington recipe in one of my books. I felt it was important to have an Ode to Lamingtons down on the record, right under my name.

Pink Lamingtons, they are mighty delicious, don’t you think? A few years ago we’d go on roadtrips quite often and we’d ALWAYS stop at a particular dinky bakery for their fluffy pink lamingtons. I think it was in Morwell, Victoria? Anyhoo, wherever it is, it’s Lamington Central. Go there.

Growing up my Nanna used to make lamingtons quite often. Her sponge was always super fluffy. I need to learn to perfect that fluffy sponge, because my sponges are often weighty. There is no fluff in sight if you sponge with me. Be warned. I try but fluff I’m not.
