It is raining. It has been raining ALL NIGHT! Jeepers. It’s cold and miserable in Melbourne today. That makes this day the perfect candidate for a pie plan. A pot pie plan even, don’t you think? I always thought that pot pies were the kind of pie without a pastry base, and just a flaky pastry lid on top. But when I looked it up Wikipedia told me that pot pies can have pastry all around them, but that the base needs to be flaky (puff!) type pastry rather than short crust to earn its pot pie stamp. Whodathunkit?!
I’ve found a whole lot of pot pies for you to try your hand at. I’m thinking that most of them could also just be called pies. And also I’m thinking that any of these can be made with just a pastry lid, easy peasy style, rather than rolling out a base as well. I think it’s okay to cheat at pies this late in the week.
