How do you feel about pizza? I must say, it’s one of my favourite foods, but I don’t really eat it very often. This is not because I don’t want to… it’s more because I’ve committed to 12 months of trying to eat LESS of the things that make me plump. LOL.  That’s not to say that I’ll NEVER eat it, but it’s more of a once every couple of months thing, rather than a weekly treat.

I might have told you this before, but we have a great pizza oven in our courtyard. We bought it when we were catering my daughter’s wedding and it’s been such a godsend, not just for pizza, but for bread and baked goods of all kinds.

If you don’t have a pizza oven, that’s okay. You can just use your oven on the hottest setting (watching carefully!) Some people use a pizza stone for a nice crispy pizza bottom. You can do that too, if you like. I tend to just pizza in a regular baking tray , giving the pizza  a good burst of heat in the bottom of the oven, before shifting it to the top for a bit of a brown up at the end of the cooking period.

    Lucky you having a pizza oven! I would love one! We are having homemade pizza tonight (that’s if I stop surfing the internet now and go and make the dough!) nothing fancy, just topped with fresh tomatoes and mozzarella! Your suggestions look delicious!

    My favourite pizza is a pesto base with fresh haloumi, tomatoes and red onion. also good with salami if you’re not a vego. I love the idea of a breakfast pizza.

    Roast pumpkin, jamon and goats cheese pizza (tom paste on base, only ever make Jamie Oliver basic pizza dough) with fresh pesto after it comes out of the oven or rocket with balsamic, winner every single time.
