Tacos are the popular kid on the foodie blog at the moment. These bundles of awesome have diverted from the dull packaged, mince meat and iceberg variety of old to become a delicious, trickily-juggled parcel of complexity and melding flavours. Yum.

You should make tacos your own. You don’t have to play by rules.  Cultures can be crossed and rules can be broken in the search for the best combination and flavour punch.

Middle Eastern taco with roasted vegetables and smoked eggplant dip? Why not?! Thai taco with spicy chicken, sliced red onions and coriander? Do it!  Vietnamese style, with coleslaw, grilled pork and fresh chill? Taco that! Bespoke burritos? I’ll take three!

Tacos have gone way beyond their traditional (delicious!) roots. You should choose your own taco adventure, I think.  Here are eleven good ideas to get you started.

        Hi Pip and Gourmet Girlfriend, I think the trick is getting a tortilla press! I got mine from Fireworks Foods in Sydney but I’m sure you can get one from Casa Iberica or similar. For corn tacos you just need masa harina, salt, and water, mix it into a dough and press! I can give you exact quantities if you’re keen, or there’s recipes all over the internet. For flour tacos a rolling pin seems to work fine as it’s more like a traditional dough.
        I made a grandiose make-from-scratch-fervour-fuelled statement about a year and a half ago that I would NEVER BUY ANOTHER TORTILLA! and it’s actually been really easy! We eat Mexican about once or twice a week too and I never seem to get sick of making them :)

    Everyone also seems to have their crockpot/slow cookers out. Every recipe I read is crockpot-this or slow cooker-that. Not that I’m complaining – I love slow cooked food.

    Tacos are yummy. I made spicy chicken, veggie (corn, zuccinni, broccoli and onion) and pinto bean ones with lime and coriander rice last week. Also my made-up healthy style guacamole with chopped up celery, tomato and onion through it. Yummy, fresh and crunchy. Lots of lime, too

    Making your own tortillas! Wow – that’s impressive!! I’m putting that into the too hard basket for now because tacos always seem to be a mid-week meal for me. Would love to have a great recipe though to try one weekend when I need some kitchen therapy.
