Food: Eleven Brilliant Bruschetta Ideas
Perhaps you are like me and love anything on toast? Yes? Granted, I do try not to eat too much bread these days, but I will go weak at the knees if you skim a clove of garlic over a golden piece and plonk it alongside a bowl of soup. OMG.
Of course, toast is not just the sidekick to a nice bowl of soup. Toast can stand alone, topped with something delicious, and be a meal in itself. Toast can be its own hero, especially if you dress it with something seasonal, a twist of black pepper and sea salt. Grilled vegetables, local cheese, sliced fruit, artisan smallgoods. All these things are quite at home on a bed of toast, especially with a glass of wine on the side.
I’m pretty partial to garlic toast with avocado, lemon, salt, pepper and chilli. But I also really love tomato, fresh basil and salt on bruschetta, because it’s a total taste of Summer encapsulated in toasty style. I like that Hungarian pepper spread on toast too, with a thin slice of cheddar cheese on the top (not melted!) And I’m quite partial to honeyed eggplant on toast. Or cold potato curry on toast. Or cheese on toast. How about you?!
Who knew that such humble ingredients could be the beginnings of so many great things?! Who knew?! I’ll tell you who. The Italians knew. That’s why they created bruschetta, long before the great Antipasto revolution of the early 90s. Little did they know that it’d make its way onto every entree menu in every pizza joint, all around the world!
