Your Weekend : Yes! You Want To Bake Biscuits!

Ahem. *clears throat* Let’s talk about biscuits!

Biscuits. I like ‘em. I know that you might want to say cookies, and that is fine with me, but I will say biscuits. My Nanna used to make biscuits.  She’s never made a cookie in her life.  She made all kinds from various Australian Women’s Weekly books and torn out magazine clippings. Do we still tear out magazine clippings? I mean, do you? Or do you just head to the internet and google and print what you like? Hm. Do tell.

Also, do you dunk your biscuits? Do you not? Are crumbs in the bottom of a cup of tea a repulsive sediment or are they are delicious treat?  Are bought biscuits better than home-made ones?  Are stale biscuits gross?  Do you think biscuits are scones? Do you use the term cookie? (We are asking all kinds of important questions today!)

Whilst you ponder that, here are eleven delicious biscuits to bake this weekend. If you’d like to pack some of your baked bounty up in a tin and send them to me, I’m totally up for it.  Let’s go!

    I still rip from magazines but I also google too. I have my nan in laws clippings from the 60′s& 70′s along with her handwritten recipes for cakes, slices & biscuits ( never cookies ). They are special….

    I never dunk because I don’t drink hot drinks. Sometimes my boys tell me they hate to things I bake & would prefer Tim tams or Kingston’s from the shops. I always feel sad & a little cross. I do use the word cookies but also biscuits. I’m not sure what is the difference but we know what they are. Stale biscuits ARE gross Pip. Biscuits are never scones, that’s crazy talk!

    I hate crunchy biscuits, I’d rather soft & chewy. What do you prefer?

      OK now I’m home I can give you my recipe for my fave biscuits to make-

      Chunky Munkeys ( adapted from a recipe I wrote down from the girtl who used to cook on Huey’s cooking show about 11 yrs ago)

      180gr butter
      3/4 cup brown sugar
      3/4  cup castor sugar
      Cream all the above to lovely & smooth & light

      Now add 2 eggs & a splash of vanilla & mix

      Now add-
      2 cups plain flour
      2 1/2 cups ground oatmeal ( I sometimes used rolled oats)
      1 tsp baking soda
      pinch of salt
      400grams of chopped up chocolate bars ( I use a mix of Cadburys dairy milk & cookies & cream chocolate)
      Mix it all together. Put balls of mixture on trays & bake at 190 for 10-15 mins. YUMMO!!

      The week before my wedding I made these constantly. Me & my BFF could not stop eating them- I ate lots of them before they cooked because thats what I do :)

    I love baking full stop but biscuits and cookies are probably my favourites because they’re so easy to share and enjoy with a cup of tea.

    I find myself using the words cookies and biscuits interchangeably but now that I blog a lot about baking, cookies is the more popular term. Scones are always scones though, never biscuits!

    My favourite cookie/biscuit recipe right now is for Rainy Day Double Choc Chocolate Cookies. I make up the mixture and freeze the rolled up balls for another day so I can enjoy them on a whim. The house smells divine and puts everyone in a good mood.

    My other favourite cookie recipe is for  Norwegian Kransekake cookies. Traditionally you bake them in rings and stack them to make a tall tower – its the national wedding cake! But I love them as cookies. A word of warning – they’re highly addictive. I always have to make a triple batch at Christmas time!
