Food : Gourmet Girlfriend Bakes Eggs!

Do you like to have special Breakfasts sometimes?  I do. Usually on the weekends, but also when it’s school holidays we often ease into the day and have yummy brekkies together. You get the picture, there are old school cartoons on the telly, kids sprawled on the couch. We take it slow. I love that.

Speaking of slow and yummy, I had a request for a baked egg recipe.   Have you eaten them before? They are super easy to make and super tasty. Here’s my baked egg how-to. Go make some eggs!

Gourmet Girlfriend’s Baked Eggs
(recipe for 2 serves)

Ingredients
1 can of four bean mix
1 can chick peas
1 can diced tomatoes
2 eggs
1 teaspoon ground cumin
2 cloves garlic, finely chopped
1 teaspoon smoked paprika (regular will be fine!)
1 fresh lime, for squeezing onto finished eggs
fresh coriander
chili (optional)
salt and pepper
a slosh of olive oil

Method
Heat a small pan with a tablespoon of olive oil at medium heat.  Add garlic. Fry until fragrant, for about a minute.  Add the paprika and the cumin. Stir well.  Next, add the beans, the chickpeas and tomatoes.  Cook the whole schmozzle for 10 minutes.

Now for the eggy bit, using the back of a soup ladle press a hollow into the mix to place the eggs. Carefully crack the eggs into the hollows (or crack them into a tea cup and then tip into the hollows if you are the extra careful kind!)

Pop a lid or plate on the top and cook gently till eggs are cooked.

Serve with toast, salt and pepper, a squeeze of lime, chili if you like & fresh coriander.  And coffee of course!
